The experience

We are looking for a kitchen manager and chef for our onsite cafe that serves meals for our core team and volunteers!

Cafe Curcuma is a vegetarian kitchen and is built as an outdoor kitchen. It has all the basic kitchen supplies such as a fridge, a stove, an oven, a blender, a prep table and all the necessary kitchen tools.

Cafe Curcuma is used to prepare meals as well as well as local treats for core staff, volunteers and occasional guests.


What you offer

25 hours of help per week

Cooking: Choose the menu, pick ingredients and cook delicious dishes.

Kitchen Hand: Help prepare, finish and serve meals.

Shared Dorm: You will have a bed in a shared room, which means you will share the same room with other travelers.

Tent: You will sleep in a tent at a camping site.

Program Details

At the moment we are looking for someone that would like to take on a position as a kitchen manager or head cook of our on-site cafe – Cafe Curcuma starting ASAP!

Cafe Curcuma is a vegetarian kitchen and is built as an outdoor kitchen. It has all the basic kitchen supplies such as a fridge, a stove, an oven, a blender, a prep table and all the necessary kitchen tools.

Cafe Curcuma is used to prepare meals as well as local treats for guests when we are running tourism packages, such as cacao tours, and guest stays. The kitchen is also used for lunches, dinners, snacks and pantry prep each day for our volunteers and staff.

We are looking for someone to lead Cafe Curcuma as the Kitchen Manager. You will be working alongside our Maya Q’eqchi Chef who prepares the local food and snacks for the Q’eqchi women who come to toast and peel the cacao at the center. You'll also be responsible for making sure our core staff and volunteers are eating well every day!


Activities & Shift

Responsibilities:
- Lead the preparation of breakfasts, lunches and dinners Mondays-Friday for a group size of up to 10 people

- Manage kitchen inventory and place orders for food when necessary

- Make sure the kitchen cleaning calendar is functioning and the space is tidy

-Collect dish cloths to be washed weekly

-Clean and sort groceries between Cafe Curcuma and staff kitchen

-Prepare locally-sourced goods to sell to cacao tour customers

-Make cacao/turmeric based drinks for customers when requested

-Prepare weekly pantry items such as: chili oil, oat milk, hummus, bread, probiotics etc…


Rules

The ideal candidate will be able to stay at least 3 months. The first month will be a trial month to ensure that you are a good fit for our project, but also that this project is a good fit for you. There could be the option for a longer term paid position after revision.

When you arrive you will receive training for the position, and then you will be expected to work independently (with guidance and assistance if necessary). You will also be cooking alongside other volunteers as your 'sous chef.'

We require that you be a self starter, and are a passionate and driven worker who is here for the project, not just for the free living.

You are expected to contribute 5 hours a day, 5 days a week, in exchange for accommodation in a shared volunteer cabin and three meals a day 5 days a week. On the weekends we fend for ourselves, but you are welcome to use the provided food to cook for yourself!
