I’m Jo, and I’ve been the owner and operator of Wilmot Hills for several years. I’m passionate about running a small orchard and distillery, with ethical farming at the core of everything we do. I take pride in sharing my knowledge and skills with those who are eager to learn. Volunteers can expect a warm, respectful environment where you’ll be treated with kindness, encouraged to grow, and given space to fully enjoy this unique experience.

My experience at the Distillery & Orchard was amazing. Jo is an incredibly generous and knowledgeable host, always happy to share insights about the local area as well as plenty of great tips on places to visit and explore. I had a lot of fun learning about how he makes his cider, brandy, pommeau, limoncello, and his other products.

Working at the distillery was always engaging thanks to the variety of tasks, which kept each day interesting and hands-on. A definite highlight was Jo’s incredible cooking — and of course, spending time with Jet.

Jo was an incredibly generous host. Extremely knowledgable about the surrounding area and gave us great recommendations of places to visit. The work on the orchard and in the distillery was fun, I really enjoyed learning about the whole process. Jo’s cooking was a highlight. I would 100% recommend!

Wilmont Hills distillery is a beautiful place, offering great facilities for volunteers. There are many options with work tasks, from which you can choose on based on your interests and skills. For me, volunteering offerend a learning experience with gardening. As a host Jo is very generours and made possible for us to see Tasmania when we had our days off. He has a unique sense of humour, and sometimes communication between us could’ve fuctioned a bit better to avoid misunderstandings. All in all, a beautiful and interesting place to volunteer and a great opportunity to see Tasmania.

One of the most beautiful places I’ve ever been to! We got a list of tasks to follow and learned a lot about gardening. Jo is quite precise about how things are done but most of the time we were working independently - that caused a few misunderstandings. He is very generous and let us use his car to explore the surroundings. Tasks were not too difficult and we had plenty of free time. Jo’s dog is absolutely adorable and the small cabin we got to live in was well cute.

Foi muito bom..."Jo" e uma pessoa divertida e muito atencioso, no dia do meu aniversário ele me levo para jantar em Devonport. Conheci seus amigos e vizinhos "Cindy,Paulo, John " excelentes pessoas , Fizemos churrasco"Jo" cozinha muito bem, aprendi a fazer lemoncello.
As tarefas na propriedade são bem simples e fáceis.
A acomodações sao excelente.
