I’m Jo, and I’ve been the owner and operator of Wilmot Hills for several years. I’m passionate about running a small orchard and distillery, with ethical farming at the core of everything we do. I take pride in sharing my knowledge and skills with those who are eager to learn. Volunteers can expect a warm, respectful environment where you’ll be treated with kindness, encouraged to grow, and given space to fully enjoy this unique experience.

Jo is incredibly generous and knowledgeable about all things Tasmania, travelling and distilling! Was expecting only an education on distilling but Jo taught me so much about life. Takes a while to get Jos humour but once you do you'll have lots of laughs with him. The views from the property and everywhere near it were incredible so many places to visit near Wilmot. And Jet his dog is the best companion!

Hello, my name is Pierre, I'm 21 years old. I just had a wonderful experience in the great outdoors. The setting is fantastic and peaceful. Jo is a wonderful person who introduced me to so many things. The work is varied and often rich in learning. He has a great distillery with lots of ideas for its development. Jo is a generous person and lets you manage your schedule. There is also a dog named Jet who will be your best companion during your stay. Go ahead and embrace this experience.

I am incredibly grateful for my experience at Jo’s! During my stay I learned so much, not only about the orchard and distillery but also about life. I was given a list with tasks which had to be done and was able to work independently, which allowed me to develop new skilled and gain new experiences. Jo’s very precise and fair about the working hours and the place is an absolute dream to stay at. Jo made sure I feel welcome and was very generous at all times. I truly appreciate the be part of the daily operations and the work involved.
