Finca Las Mercedes
We are a small family-run farm located in Costa Rica’s Central Pacific, dedicated mainly to goat dairy production under a regenerative approach. This means that everything we do aims to care for the health of our soils, animals, and the people who enjoy our products.
Our goal is to produce high-quality food while giving back more to nature than we take. Over the years, we’ve learned and applied tools such as agroecology, organic farming, animal welfare, holistic management, and permaculture, combining them into the living system that is our farm.
Our property is around 7 hectares, with 4 dedicated to farmland and 3 to forest conservation. The forest is alive with wildlife — howler monkeys, deer, anteaters, wild cats, colorful birds, and many other species that remind us every day of the importance of protecting biodiversity.
In addition to our goat dairy, where we make products such as milk, yogurt, kefir, and cheese, we also raise free-range chickens for eggs, care for a large mango plantation, and are working on creating a food forest, orchard, and greenhouse to produce even more fruits and vegetables.
But our project is not just about farming — it’s about learning, regenerating, and building community. We believe in collaboration and are constantly involved in local initiatives with other farmers, schools, and entrepreneurs, helping each other grow in a sustainable way.
We, Iván and Gabriela, run the farm with dedication and love. Iván comes from a family of farmers and brings a lifetime of agricultural knowledge, while Gabriela, originally from the city, found her calling in nature after becoming an Agricultural Engineer. Together since 2015, we’ve built not just a farm, but a way of life.
Volunteers who join us become part of this journey. You’ll experience hands-on learning about regenerative agriculture, animal care, and food production, while sharing daily life in a peaceful natural environment. We love exchanging knowledge, cooking together, and creating connections that last beyond the stay.

The farm is run entirely by us, Iván and Gabriela, we do have 2 permanent employees that help with our personal household chores and farm work. We also hire additional temporary help at the farm for large or more technical chores.
